Speedy Salsa Chicken: Your New Weeknight Hero

Say hello to your new favorite stress-free dinner: Speedy Salsa Chicken.   This dish is so simple, it nearly cooks itself, and it's been a smash hit in our home for years.   Whether you enjoy a gentle hum of heat or a blazing kick, just pick your favorite mild, medium, or hot salsa to decide the taste pace.   We love serving it with Spanish rice and some Mexican-style corn to complete out the meal.

What You'll Need 
  •  4 boneless, skinless chicken breast halves
  •  4 tablespoons taco seasoning mix
  •  1 cup salsa (your preferred heat level) 
  •  1 cup shredded Cheddar cheese
  •  2 tablespoons sour cream (optional, but extremely recommended!)

Let's Cook! 

Step 1
Prep: Gather all your ingredients.     Preheat your oven to 375°F (190°C).     Lightly grease a 9x13-inch baking dish.  

Step 2
Season the Chicken:     Place the chicken breasts in the prepared dish.     Generously sprinkle taco seasoning on both sides of each breast.  

Step 3
Salsa Time: Pour the salsa evenly over the chicken.  

Step 4
Bake: Pop the dish into the preheated oven.     Bake for 25 to 35 minutes, or until the chicken is tender, juicy, and its juices run clear when punctured.  

Step 5
Cheese Please: Carefully remove the dish from the oven.     Sprinkle the grated Cheddar cheese evenly over the chicken.  

Step 6
Melt & Serve: Return the dish to the oven and continue baking for another 3 to 5 minutes, just until the cheese is properly melted and bubbling.  

Step 7
Finishing Touch: If using, top with a dollop of sour cream before serving.     Enjoy your wonderful and easy Salsa Chicken!
